Tips:

No matter which activity you choose, don't forget your waterproof sunscreen, even on cloudy days, and re-apply it every hour.
The water tends to be calmer and flatter early in the morning, making most watersports more fun and forgiving and easier to learn. Some operators offer special discounts for early tours, as well. So, get up and get going - you can always take a nap later.
Spend the extra money for a guide. There is no substitute for local knowledge and an experienced guide will make your trip safer and more enjoyable and can help you with your technique.
